Ghee has a high smoke point (around 250°C), so it does not break down into harmful compounds the way many oils do. That is why it is great for tadka, frying and roasting.

In Ayurveda, ghee is considered a carrier that helps herbs reach tissue. Many people find a small amount with meals soothing. The science on "healing" claims is thin, but the digestibility is real for most.
A note on portion
Ghee is still a concentrated fat. A teaspoon or two a day is plenty for most people. More is not better.
